lemon-lime cornbread cookies

Ever had cornbread cookies before?   

No?

Me neither… I’m a cornbread cookie virgin. This was my initiation into the cornbread cookie world.

Think the texture of cornbread, but buttery and crispy. Think good!

No never mind… think Grrrrreat!

These cookies have a sweet lemoney flavor with a tart lime glaze. Kinda makes you pucker up a bit… but in a good way.

Here’s everything you need for lemon-lime cornbread cookies…. except I forgot the egg… So mentally pretend there’s an egg in the picture. ;)

First you want to cream the butter and sugar together. Once its light and fluffy, add in the lemon extract and egg. Continue to beat until nice and creamy.

In a separate bowl, combine your cornmeal, whole wheat pastry flour, salt, and baking powder.

Add dry ingredients to wet ingredients. Mix just until combined.

Drop cookie dough by the spoonful onto cookie sheet.

While the cookies are baking you want to make the tart lime glaze….

Zest one lime… and then juice it…

Add the zest and lime juice to 1/2 cup powdered sugar and whisk until nice and smooth…. Drizzle on top of cooled cookies and enjoy!

Recipe adapted from All Recipes

  • 3/4 cup butter (softened)
  • 2/3 cup sugar
  • 1 egg
  • 1 tablespoon lemon extract
  • 1/2 cup cornmeal
  • 1 cup whole wheat pastry flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • zest of one lime
  • juice of one lime
  • 1/2 cup powdered sugar

Preheat oven to 350 degrees.

With a mixer, cream butter and sugar for about 4 minutes. Add lemon extract and egg. Mix until creamy. In a separate bowl, combine cornmeal, flour, salt, and baking soda. Add dry ingredients to wet ingredients and mix until combine. Drop by rounded spoonful onto baking sheet.

Bake for 10-12 minutes until lightly golden. Remove cookies from baking sheet and cool on cooling rack. While cookies are cooling, make glaze.

Combine powdered sugar, lime zest, and lime juice. Whisk until smooth. Drizzle glaze onto center and cookie. Enjoy after glaze has set.

These cookies would be perfect with afternoon tea… if you don’t drink tea thats okay. I don’t drink tea, nor do I have people over for tea, but I imagine it’d be great with them.

I ate these with my coffee… it was delicious :)

  8. Cornbread in a cookie? Never tried it, but I’m always up for something new. The way you describe the sweetness, makes the back of my jaw twinge just a little like eating a sour patch kids candy. {I like that just so you know} :)

    ohmigod ohmigod!! I MUST make these! I’m obsessed with cornbread….and in cookie form? that’s fantastic. I dont’ have lemon extract….but I suppose I can just use more lemon zest?

    I love cornbread. I guess I need to think outside the box.. I’ve only ever had it with gumbo or chili-type stews. These little tea party cookies look scrumptious! :)
