Oven Fried Pickles

If you’ve never heard of, or tasted fried pickles before, there’s a strong chance you’re cringing right now. I felt the exact same way until I tried them.
It was my junior year in college. One of my good friends and I were out running errands and we were starving. She suggested we get Pickle-O’s from Sonic (second Sonic reference this week). I cringed at her suggestion. I had no idea what Pickle-O’s were. She said they were fried pickles and they were amazing. She was so convincing, I had to try them.
I died and went to pickle heaven! They were insanely good! They came with a side of ranch dipping sauce. It was the best thing I’d ever had. I was a fried pickle convert. One of my favorite local restaurants (which sadly closed down) had fried pickles on the menu. They called them frickles. They were delicious!
Attempting a healthier version, I chose to bake mine instead of deep frying them. They were equally as good. The key is in the seasoning.
To start you want to combine a couple of eggs, flour, worcestershire sauce, garlic powder, cajun seasoning, hot sauce, & pepper. Whisk everything together to get a nice thick mixture.
Next you wanna dunk the pickle slice into the egg mixture, then dredge it in panko bread crumbs.
Place on a baking sheet that’s been sprayed with non-stick cooking spray.
Place in the oven and broil for 2-3 minutes on each side, watching the oven closely to make sure they don’t burn.
Turn oven broiler on.
In a medium bowl, whisk eggs and flour together. Add worcestershire, hot sauce, garlic powder, cajun seasoning, and pepper to egg mixture. Mix well.
Place panko bread crumbs in a shallow dish. Dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
Place coated pickles on a baking sheet that’s been coated with non-stick cooking spray. Place pan in middle rack of oven. Broil for no more than 3 minutes on each side. Watch that oven like a hawk to make sure they don’t burn.
Serve with your favorite ranch dipping sauce & enjoy
