Li Hing Mango Coconut Smoothie + $150 Giveaway

March is National Frozen Food Month and I can think of no better way to celebrate than with a smoothie! We drink a lot smoothies in our house, so keeping my freezer stocked with a variety of frozen fruit is a must. I feel comfortable knowing I am serving my kids fruit that has been picked that the peak of ripeness and packed with vitamins and minerals!

I am also excited to announce that this year marks the 30th Annual National Frozen Food Month. To celebrate, the National Frozen and  Refrigerated Foods Association is offering some incredible sweepstakes this month! Also, I am  offering a $150 Visa Gift card. Li Hing Mango Coconut Smoothie:

  • 1 cup frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 1 cup (more for desired thickness) of low-fat coconut milk
  • 2 teaspoons Li Hing powder (optional) -this powder provides a sweet & sour tangy flavor

Place all ingredients in blender and blend until smooth. Add more coconut milk if needed for desired thickness.

Makes two servings.

    Goodness, what a generous giveaway!! My favorite way is to have frozen strawberries ready for anything from smoothies to thawed and served over angel food cake in the summer. I LOVE frozen bananas for soft serve too!!

    My favorite is using frozen fruit for smoothies, in oatmeal, cereal, pancakes, muffins, etc. Yummy, healthy, fresh fruit year round.

    I freeze everything! lol But my all time favorite is bread! It keeps it out of site for me so I don’t over indulge, plus when I want it to go with dinner or on a sandwich, I place it in the microwave for 20 seconds, then pop it in the oven for about 5 minutes, turns out as good as the day I bought it!!

    I use frozen vegetables in almost all of my meals. But my favorite is simply laying frozen chicken, frozen cheddar cheese, frozen corn and black beans, and 8 Oz of frozen cream cheese in the crockpot for 8 hours. Toss in a jar of salsa and some fresh spinach and we have the inside of burritos with literally NO prep!

    I always freeze leftover chopped onion and tomato paste to use later. Both work well for recipes like soup or chili.
