Kiddie Breakfast: Cheesy Egg Sammie

We have routines in our house.

Little LK wakes up around 6am to eat, then she plays in her bouncy chair. Just before 7, like clock work, M wakes up. She brushes her teeth, gets dressed for school, asks for some water or juice, then she anxiously waits for her breakfast.

This particular morning she asked for an egg sandwich with cheese, and then said “Mommy it’s my favorite”.

Here’s how we make M’s Cheesy Egg Sammie:

Spray a small pan with non-stick cooking spray and bring to medium heat. In a separate bowl, whisk one egg with 1 tablespoon milk. Pour the egg in the fry pan and cook until it’s about halfway scrambled.

Too the egg, add one tablespoon of shredded cheese and and scrambled in the pan until it’s cooked.

Place cheesy eggs on a lightly toasted slice of whole-wheat bread.

Proceed to thoroughly enjoy your cheesy egg sammie :)

Or as  M would say… “Mommy I loooove my cheesy eggs”

Brown Rice Crispy Balls…

Is it weird that I’m excited its only suppose to reach 90 degrees today?

I visited one of my good friends in Phoenix a couple of summers ago (August to be exact). We went out to dinner and she kept saying how nice the weather was and how we should sit outside… it was 94 degrees at 8:30 PM. I thought she was crazy!

Angela… I don’t think you’re crazy anymore… ;)

Moving on…

I’ve been wanting to make some sort of “healthy” treat for M (and me) to eat. After playing around the kitchen… I came up with these Brown Rice Crispy Balls. They are so easy to make!! And so good!

The ingredients are simple:

  • 2 1/2 cups Brown Rice Crispy’s
  • 1 tablespoon Chia Seeds (optional)
  • 1/2 cup Brown Rice Syrup
  • 1/2 cup Sunflower Seed Butter (or any nut butter)

In a small sauce pan, combine brown rice syrup and nut butter, and stir over medium-low heat just until mixture is combined and smooth.

Would you just look at that!! I swear I could’ve just consumed the nut butter/rice syrup mixture! It was sooo good!!

Pour nut butter sauce over rice crispy’s and chia seeds. Stir until combined.

Roll into 1 inch balls. I used a melon ball scooper. It worked perfectly :)

My goodness these things are so good! M LOVED them! They were so easy for her to eat! Plus… I have a healthy treat for me too :)

Cream Cheese Tomato Sammie…. (spread cream cheese on whole wheat bread and place a thick slice of tomato in the middle)

And just so you know… M and I pretty much eat the same thing for lunch… except my portions are bigger, and I like the crust on my bread ;) ;)

What’s For Lunch – Take II

Hi :) How was your weekend? We spent most of the weekend indoors…

I got a couple of very sweaty runs in and managed to take a trip to my neighborhood farmer’s market :)

I LOVE our neighborhood farmers market! It has such a comfortable homey feel :) Its almost like a little social hour… I always run into neighbors and friends I haven’t seen in a while… and M loves it :)

They had incredible looking heirloom tomatoes… but I held out on buying any… I have my own stash at home to finish first :)

I have so many tomatoes from my garden that I’m eating close to three a day! My favorite way to eat them is sliced with a sprinkle of salt. Nothing tastes better then a fresh garden tomato!

I’m so glad you all enjoyed the little sneak peek of what I feed M for lunch. I’m going to try to include a few kiddie lunches a week.

Here’s one of her lunches from the weekend….

Pizza Quesadilla, Fresh Steamed Corn, and a local Organic Peach….

For the pizza quesadilla I took one whole wheat tortilla, heated it up a little on the stove, added some marinara sauce and mozzarella, fold in half, then continue to heat until lightly toasted and cheese is melted inside.

What’s the BEST “Worst Movie” you love to watch?

I know I’m aging myself by admitting this… but I LOVE the movie “Satisfaction” with Justine Bateman and Julia Roberts. Its such a bad movie…. but I LOVE LOVE LOVE it! My husband truly doesn’t understand why I watch it. I know its a bad movie… but I love it :)
