Kiddie Snack: Lime in the Coconut Smoothie

If you just happen to have unsweetened coconut milk and shredded coconut collecting dust in your kitchen like I did, then this is the perfect smoothie for you or your kiddo. Or, if you just love the flavor combo of lime & coconut, then this smoothie is for you.

It’s no secret that M loves her smoothies, so any chance I get I try to make her one. This one is super simple to make.

All you need is at least one lime, vanilla yogurt, unsweetened lite coconut milk, shredded coconut, honey, and ice cubes.

Place all the ingredients in a blender or food processor and blend until smooth.

This recipe makes the perfect little kiddie portion. You can double the recipe for a larger one.

Lime in the Coconut Smoothie

Ingredients:

  • 1/2 cup low-fat vanilla yogurt
  • 1/4 cup unsweetened lite coconut milk
  • 2 tablespoons shredded coconut
  • Juice of 1/2 a lime
  • 1 cup of ice (more depending of the thickness you like)
  • 1-2 tablespoons honey

Place all ingredients in a blender or food processor and blend until smooth. Serve in a cute cup & enjoy :)

Veggie Nuggets for Kids

It’s a good thing my kid loves food just as much as her shoes…

Because she really loves her shoes… I mean like, really…

If I let her sleep in her shoes she would.

These veggie nuggets climbed straight to the top of her favorites list! Whenever I make something for the first time she’s always a little hesitant. She’ll take a little nibble to test the waters, maybe take a gulp of milk, and if she likes it, she’ll nibble some more.

Maybe it was the fact that these were in nugget form that appealed to her. Maybe it was because these are made from the classic all-star kid veggie mix of carrots, peas, corn, green beans, & lima beans.

Ingredients

  • 8 oz (half a bag) frozen mixed veggies (carrots, peas, corn, green beans, & lima beans)
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • Juice of 1/2 small lemon
  • 1 1/2 tablespoons olive oil

Directions:

Preheat oven to 350 degrees.

Cook veggies according to package directions. Let cool. Place veggies in a food processor and pulse a few times (don’t over process). In a large bowl, combine veggies, bread crumbs, egg, salt, garlic powder, lemon juice, & olive oil. Mix well using the back of your spoon to continue to mash the veggies.

Spray a baking sheet with nonstick cooking spray. Using a small scooper (I used a melon ball scooper), scoop the mixture onto the baking sheet. Using your hand, shape into a nugget form.

Bake at 350 degree for 40 minutes. Flip nuggets to other side after 20 minutes.

These nuggets will forever be in our lives (at least till she grows out of them ;) )

Nutty Popcorn Snack Mix {Kiddie Treat}

We were having your standard Sunday morning. Coffee was consumed, the newspaper was read, cartoons were watched, and then it was time to get ready for for the day.

I got dressed, walked into my bathroom, looked into the mirror to apply my lipgloss, and  in walks M. She had one of my hat’s on and was dragging in my gym bag, which after one look, I noticed she had filled with 4 unmatched pairs of my shoes…

She then proceeded to grab a travel size shampoo from my bag and pretended to dab it on her skin like she was applying lotion.

You can’t make stuff like this up folks.

After prying my gym bag away from M (she kept the hat on), we went downstairs to make some Nutty Popcorn Snack Mix.

This is one of M’s favorite snacks. It’s got all her favorite’s, and with only five ingredients it comes together in a matter of minutes!

Here’s how to make Nutty Popcorn Snack Mix:

Recipe Inspired by Parents Magazine.

Ingredients:

  • 1 bag popped microwave popcorn (plain)
  • 1 cup dried cranberries
  • 1 cup pretzel sticks
  • 3 tablespoons grated parmesan cheese
  • 1 cup dry roasted peanuts

Directions: Combine all ingredients a large bowl. Stir until combined. Serve immediately. Store in an airtight container.

This makes the perfect sweet/salty snack! Everyone in my family loves this :)
