Kiddie Turkey Tacos

This is what typically goes on during mealtime. M {hopefully} eats about half her meal & veggies, and LK eats & plays & eats & plays, & plays, & plays… leaving more food on the floor than I’m sure actually entered her mouth.

To make life a little easier we have Turkey Tacos every Monday or Tuesday, then we have leftovers one or two days per week. Knowing that I can pull a meal together in ten minutes gives me a little relief in my already chaotic life.

My Turkey Taco recipe is easy.

Here’s what you need:

  • 1 pound lean ground turkey
  • olive oil
  • 1 tablespoon chili powder
  • 1.5 tablespoons flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1.5 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup water

Bring a large pan to medium heat. Drizzle a little olive oil and cook the turkey until browned. While the turkey is cooking, combine the flour, chili powder, garlic powder, onion powder, cumin, salt, & pepper in a bowl. Whisk together, then add your water and whisk until smooth. Once the turkey is completely cooked through, pour in your seasoning mix and stir for about 5-7 minutes until the meat absorbs the liquid.

Now you can make your tacos anyway you like :) We eat ours with whole-wheat tortillas, beans, shredded cheese, lettuce, & tomatoes.

My Kid’s Favorite Eats

When it comes to food, M definitely has her favorites. Like everyone, she has her regular staples such as PB&J sandwiches, yogurt, pickles, and whatever cereal of the moment she is in to. I do my best to offer her a wide variety of foods, but there are some foods that get a special request. Here are her top requested foods.

Veggie Nuggets

About once per week, she asks for veggie nuggets. Made of the classic frozen vegetable combo of corn, peas, diced carrots, green beans, and lima beans, she will clean her plate when these are served. These just happen to be highest searched kiddie recipe on Weekly Bite.

English Muffin Pizza

These are always a favorite in our house. Every time I make these Mr. Weekly Bite requests one too :)

Zucchini Fries

M loves her zucchini fries. I make them as a side dish to whatever we are having for dinner that evening.

Wafflewich

Every Saturday morning we have waffles. It’s a tradition in our home. We keep the leftover waffles to make wafflewiches. M’s favorite is peanut butter & jelly, but she also loves them stuffed with scrambled eggs & cheese.

Orange Pom-Pom Slushy

It doesn’t matter whether it is hot or cold outside. This is always a hit.

Pumpkin Pie Popsicles

Can we take a moment and address how young M looks in this picture? This was taken almost exactly one year ago. It’s amazing how much she has grown. We love making our own popsicles. With the abundance of pumpkin in the Fall season I love making her these Pumpkin Pie Pops. She loves them!

 

Bananaberry Smoothie

It’s no secret that we are smoothie lovers in our house. M will drink just about any flavor, but if she has to choose, this would be her flavor.

Salad Bar Lunch

One of our favorite things to do is grab lunch at a salad bar. Whenever we are grocery shopping, we swing by the salad bar and fill up the to go container with all sorts of goodies. M love picking out some of her favorite foods there :)

Sunflower Butter Pinwheels

Of all the school lunches I make, sunflower butter pinwheels, or sandwiches are her favorite. If she could this every day she would.

I could go list at least 6 or 7 more foods that she loves, but for the sake of the blog, I’m keeping to her 10 favorites.

Kiddie Lunch: Turkey Corn Dog Muffins

Corn Dog Muffins. The thought of putting a hotdog in a muffin never crossed my mind until I saw it on Sarena’s blog. She makes a dairy-free, gluten-free version. I was immediately intrigued. These muffins have been on my mind for several months and I finally got around to making them.

I had no idea what M’s reaction would be. We all know she loves muffins, but she is use to sweet muffins, not savory ones.

The verdict? She loved them. I served it to her for lunch along side some fruit and raw snap peas. It’s safe to say these muffin will be making another appearance very soon.

These muffins can be made in 4 easy steps:

Step 1: Combine wheat pastry flour, cornmeal, sugar, baking soda, & salt.

Step 2: In a separate bowl, mix one egg, canola oil, & milk then add the wet ingredients to the dry ingredients and stir until mixed through.

Step 3: Roughly chop 4 uncured turkey dogs and add them to the mix.

Step 4: Pour the muffin batter in a lined muffin tin and bake form 10-15 minutes or until golden brown.

I was even surprised how much I liked them :)

Turkey Corn Dog Muffins (adapted from Allrecipes)

  • 1 cup whole wheat pastry flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/4 cup canola oil
  • 1 cup milk
  • 4 uncured turkey dogs

Preheat oven to 400 degrees. Spray your muffin tin with non-stick cooking spray, or line with baking liners. In a large bowl combine your flour, cornmeal, sugar, baking soda, & salt. In a separate bowl mix your egg, canola oil, and milk. Add your wet ingredients to your dry ingredients. Mix until all ingredients are combined.  Add your hotdogs and mix through. Fill the muffin tin to about 3/4 full. Bake for 10-15 minutes or until golden brown.
