Kiddie Lunch Box: Hawaiian quesadilla with bbq dipping sauce

It’s funny watching a 2-year-old wait until you are finished photographing her lunch so she can eat it. Her instructions were simple… stay away from the table until mommy is finished taking pictures.

She would move away, then right when I would snap a picture some part of her would sneak in. From her head to the tip of her finger. I couldn’t even get mad at the kid, it was just too cute.

The motivation for M’s lunch came from some Tortilla Land Tortilla samples I received. They are uncooked tortillas that you heat on a skillet and in less then a minute you’ve got fresh cooked tortillas.

One of M’s favorite foods is a quesadilla. This Hawaiian quesadilla is a one of her favorite versions. All you need is some canadian bacon, provolone cheese, and pineapple chunks.

Heat a skillet to medium heat and cook tortilla for about 20-30 seconds on her side. On one half of the tortilla place the canadian bacon strips, then layer with cheese, and top with pineapple. Fold the other half of the tortilla over and cook a few more seconds on each side until the cheese is melty.

I serve it with grilled pineapple on the side and honey barbecue sauce on the side for dipping.

This meal makes her one happy kid :)

P.S. I left the lunch table for two seconds only to return to M trying to drink the barbecue sauce like it was orange juice. I asked her what she was doing… she looked at me and said “But mommy it’s my favorite.”

a favorite lunch – kiddie style

There’s lots of words coming out of M’s mouth these days. Most words are her made-up version of what the real word’s suppose to sound like. Except for ‘No.’ She’s got that word down pat.

I place food in front of her and her response is ‘No, No, No Mama, No!’ As cute as this sounds coming out of her mouth, Its her way of telling me she wants nothing to do with the food. Which makes our dining room like a food fight just ended.

However… when I make this spaghetti pie, there’s nothing but smiles on her face. She gobbles it right up! I think it has something to do with the shape. Kids seem to love anything thats in the shape of pie or pancakes… or french fries… or tater tots. Kids like interesting shaped food.

Kids will also eat the strangest food combinations with glee……like blueberries (pronounced “blue-oohh”) with her spaghetti, kiwi (pronunciation forthcoming) with a turkey burger, and strawberries (pronounced “stwawww”) with, well – she will eat strawberries with anything. A mouthful of sauce and pasta can be followed with kiwi and then washed down immediately with milk…doesn’t even phase her oh so refined palate. Future judge of Top Chef in the making here folks!

Cream Cheese & Pumpkin Butter Sandwich (Kiddie Style)

I don’t know what happened, but it seems like Fall weather finally arrived overnight! We woke Monday to cold and rainy weather in the DC area. Running was out of the question, it was too late to make a kidz club reservation at the gym, and for the first time in a long time I had no desire to go to yoga. Cue Insanity… No, I did not go insane, I’m talking about the workout Insanity.

I’m not exaggerating when I say this was the hardest DVD workout I’ve ever done. It was truly insane! Picture me in my living room jumping around doing drills, falling down to a push-up, falling short of breath, dripping with sweat, all while Little Miss M just sat their and laughed her little heart out. I’m pretty sure she thought I was putting on some type of show for her. I woke up this morning feeling sore in places I’ve never felt before.

Tim purchased the Insanity DVD set for himself. Its a 60 day program and you’re suppose to follow the program each day. I’m not big on following programs so I don’t see myself doing the 60 day plan… especially because I love running and yoga so much. What I will do is use the DVD’s as a cross training workout from time to time.

And now for one of the most awkward blog post transitions ever… lets move on to Lunch… ;)

Not my lunch… her lunch

On the menu was a Cream Cheese & Pumpkin Butter Sammie, leftover baked sweet potato fries, steamed broccoli, strawberries, and Pirates Booty.

I got the pumpkin butter from Trader Joe’s, but I really want to make my own. Anyone know a good recipe?

I always like to give M a little treat in her lunch. Today it was Pirates Booty. They’re easy for her to chew and she loves em’

I’ve gotten a few emails asking me if M eats everything I pack for her. The answer is no. I can tell you right now that from this lunch she’ll eat all the Pirates Booty, most of the sweet potatoes, about two pieces of broccoli, most of the strawberries, and 1/2 the sandwich.

I can personally verify that the cream cheese and pumpkin butter sandwich is delicious!
