Duty Calls

Hi Friends :)

I hope everyone had a great weekend! This is going to be a quick post.

My weekend was busy non-stop, and to top it off, my daughter has been pretty sick :(

I tried to work on my blog posts over the weekend, but duty was calling. My baby needed me.

One of the hardest things about being a mother is seeing your child sick. They are so helpless and miserable. My heart aches for her. I just wish I could take that yucky feeling away from her and give it to me so she doesn’t have to feel that way. If her fever would just go away, she would be much happier.

I’m going to try to get the “12 Weeks No Diets” post up today, but it might be late, or even up tomorrow.

We’ll be heading to the doctor soon.

Friday Photos

I got an email a few weeks back asking why I didn’t have a single picture of myself on my website. I thought about it… and had no idea why. Luckily, when I went home for Christmas, my mother sent me home with pictures. Lots and lots of pictures.

I’ve looked at my baby pictures every day… studying them, then staring at my daughter, looking to find some part of me in her.

I think every parent does this…. right?!

This started my obsession with all the pictures we have in our house. After organizing practically every photo, I wanted to share them with WB readers… not that you were asking for any :) Luckily I didn’t have any room in my suitcase for the awkward Junior High – High School years… (my mom said she’d mail them, lucky me).

Here are some younger pics and a couple of my favorites of me and my husband.

I think I’m about 1 1/2 years old here. My mom said she still has that dress!

Yes. My mother put me in a pageant. I remember this day quite well. I was five years old, and my costume was Shirley Temple. As I was walking up the steps I fell and broke my lollipop :( I was not a happy camper… you can tell from the photo!

Ultimate Peanut Butter Cookies

This weekend we had the fifth worst snow storm in DC history!

Thanks to my hubby for shoveling for over 5 hours!

Stuck inside the house with nothing to do and an intense craving for peanut butter cookies led to these.

I pulled out my whole-wheat pastry flour to make the cookies and thought to myself “Screw it! I’m using regular flour!” (I know, I’m a wild women!) ;)

The result was a flaky, peanut buttery cookie that just melts in your mouth!

Recipe adapted from “All You” Magazine.

Ingredients:

3 cups all-purpose flour

2 teaspoons baking soda

1/2 teaspoon salt

2 sticks unsalted butter at room temperature

3/4 cup sugar

1 1/4 cup light brown sugar

2 large eggs

2 teaspoons vanilla extract

1 1/2 cup creamy peanut butter

Preheat oven to 350 degrees. Whisk together flour, baking, soda, and salt in medium bowl.

With mixer on medium high speed, beat butter and both sugars for about 3 minutes until light and fluffy. Add eggs, vanilla. Beat until smooth. (Be sure to scrape down the sides.) Add peanut butter and beat until creamy.

Slowly add flour mixture to creamy mixture. At low speed beat until just combined.

Drop by heaping tablespoon onto baking sheet (sprayed w/ non-stick cooking spray). Make sure cookies are 2 inches apart. Flatten each ball by pressing a crisscross pattern with a fork.
