cilantro-lemon chicken skewers

Weekly Bite is back in action and despite my sleeplessness, I’ve been doing a fair amount of cooking and baking.

My family was very happy about this 🙂

Last night I made cilantro-lemon chicken skewers. The original recipe called for limes. The ones on my lime tree weren’t ripe yet… but the lemons were more than ready to be used.

This dinner came together in a matter of minutes.

All you do is combine the lemon juice (or lime) with cilantro, olive oil, salt & pepper, and garlic.

Combine the marinade in a large ziploc bag with chicken breast tenders, or chicken breasts cut into 2 inch strips.

Let it marinade for an hour then thread the chicken through the skewers.

Grill for about 7-8 minutes on each side until chicken is cooked through.

We ate ours with a side of brown rice and arugula salad. It was delicious 🙂

 

Cilantro-Lemon Chicken Skewers

Ingredients:

  • 1 lb chicken breast tenders (or chicken breast cut into 2 inch strips)
  • Juice of 2 lemons (or limes)
  • Large handful of cilantro, chopped
  • 3 cloves of garlic, minced
  • 4 tablespoons olive oil
  • 1 tsp salt
  • 1 tsp pepper

Combine lemon juice, cilantro, garlic, olive oil, salt & pepper. Pour marinade into large ziploc bag, add chicken to bag and let marinade for one hour.

Thread chicken through skewers and gril

    I remember those sleepless nights…hopefully soon they will be just a memory for you too! These chicken skewers look delicious and super easy…need to give these a try.
