We drink a lot smoothies in our house, so keeping my freezer stocked with a variety of frozen fruit is a must. Li Hing Mango Coconut Smoothie:
- 1 cup frozen mango chunks
- 1 cup frozen pineapple chunks
- 1 cup (more for desired thickness) of low-fat coconut milk
- 2 teaspoons Li Hing powder (optional) -this powder provides a sweet & sour tangy flavor
Place all ingredients in blender and blend until smooth. Add more coconut milk if needed for desired thickness.
Makes two servings.

Goodness, what a generous giveaway!! My favorite way is to have frozen strawberries ready for anything from smoothies to thawed and served over angel food cake in the summer. I LOVE frozen bananas for soft serve too!!

My favorite is using frozen fruit for smoothies, in oatmeal, cereal, pancakes, muffins, etc. Yummy, healthy, fresh fruit year round.
Frozen mangoes are just good for afternoon snack in the summer.
I freeze everything! lol But my all time favorite is bread! It keeps it out of site for me so I don’t over indulge, plus when I want it to go with dinner or on a sandwich, I place it in the microwave for 20 seconds, then pop it in the oven for about 5 minutes, turns out as good as the day I bought it!!

I blanch and freeze chard and kale from my garden to use all winter long. And I just made a mango smoothie for breakfast — will try your recipe tomorrow!
I use frozen vegetables in almost all of my meals. But my favorite is simply laying frozen chicken, frozen cheddar cheese, frozen corn and black beans, and 8 Oz of frozen cream cheese in the crockpot for 8 hours. Toss in a jar of salsa and some fresh spinach and we have the inside of burritos with literally NO prep!
