Family Fish Night
We’re bringing back the family style dinner at the Weekly Bite Casa! I love having the table set and having all the food ready to go in serving dishes, then everyone helps themselves.
We strive to eat together as a family as many days as possible. Mr. Weekly Bite sometimes works crazy hours, but he makes it home for dinner a good four nights per week. If he’s working late, I always eat dinner with M. Its so important for me to instill that sense of family in her.
I’ve been trying to include fresh cooked fish at least once per week. Last night we had crispy fish with lemon & dill dipping sauce. I cut M’s into little fish stick sizes. I also made some Annie’s Pasta Bunnies for her 🙂 Mr. Weekly Bite helped himself to pasta bunnies too.
I love how easy this dish came together. Before I started the fish, I made the lemon dill sauce. I like making this ahead of time that way the flavors have time to develop.
It was delicious 🙂
While the flavors of the sauce were melding, I prepped the fish. I cut the fish into the sizes I wanted and sprinkled a little salt & pepper on top of each piece. For the bread coating, I mixed panko bread crumbs with garlic powder, paprika, & old bay. I dunked the fish in egg, the dredged it in the bread crumb mixture.
Here they are ready for the oven. To cook the fish, I turned on the oven broiler and cooked it for about 4 minutes on each side.
The fish was cooked perfectly. Side note – make sure the rack you place the fish on is in the middle of the oven. If the rack is too close to the broiler, it’ll burn a bit. Luckily I noticed right away and moved the oven rack before the fish burned 🙂
I served it with sauteed squash & zucchini.
Recipe loosely adapted from Cooking Light.
Ingredients:
- 2 eggs (beaten)
- 1 cup panko bread crumbs
- 1 tsp paprika
- 2 tsp garlic powder
- 1 tsp old bay
- 1 lb fresh cod, cut into filet size of your choice
- salt & pepper
- {Lemon Dill Sauce}
- 1/2 cup light mayonnaise
- 3 tablespoons finely chopped dill pickle
- 2 tsp dried dill
- 1 tsp garlic powder
- 1 tsp onion powder
- Juice of one lemon
Combine mayonnaise, pickle, dill, garlic powder, onion powder, & lemon juice. Mix well and place in refrigerator until ready to serve.
Preheat the broiler. Beat eggs and place in shallow dish. Combine panko, paprika, garlic powder, & old bay. Cut cod into desired filet size. Lightly sprinkle fish with salt & pepper. Dunk fish into egg, then dredge into panko mixture. Place on a baking sheet that’s been sprayed with non-stick cooking spray.
Broil for 3-4 minutes on each side.
The fish was delicious & our family style dinner was a success!
We’ll be making this again soon 🙂
Lol…I love that picture with M’s arm in it 🙂
This looks great! I’ve been trying to incorporate more fish, too. I’m definitely going to give this one a try. Thanks! 🙂
Crispy fish sounds so good right now! And the dipping sauce looks incredible 🙂
I don’t eat fish, so I never cook it… this looks like a nice way for me to start!
I love family style dinners too! I never do baked breaded fish for the boys, but I know they would love it. I need to do that soon.
Family style dinners take me back… such an ideal way to serve supper! The addition of the squash and the zucchini sounds like a nice compliment to the fish.
I love this idea. The dip sounds awesome. Mayo repulses me but I think I could swap it out for Greek yogurt or something and it’d be just as good. I love the dill-lemon combo. Yum!
do you think you could use salmon?
I used to really love fish sticks as a kid (from the box) and this recipe brings back great memories! If my Mom could have only made home made ones 😀
I love this dip! Do you think there’s anything you could substitute for mayo ??
Yum! This looks great.
Yay for fish. It’s the one thing Enzo never complains about eating and fried fish is just that much better. I love dill but never made a dill sauce before. I’m going to make this on Friday.
Amanda – Yes, I think salmon would taste great with this recipe 🙂
Mary – I like Tracey’s idea of subbing greek yogurt for mayo. It may taste a little tangy, but still delicious 🙂
Da – Let me know how it turns out 🙂
I will. I just put it on the menu for tomorrow. I’m so excited.
I’ve been aiming for fish 1x per week too! This looks great, and such a big believer in family dinners no matter how hectic things get!
I am trying to cook more healthy options for my family…not sure if the kids will eat this (or even try it) but I know Billy and I will. I am thinking of trying this with tilapia…hopefully it comes out as good as yours did! Thanks for helping me expand my fish recipes!
Barbara – It’ll taste great with Tilapia! I almost bought that fish instead of Cod for this recipe.
This looks awesome. Will put it on my “recipes to try” list.
I REALLY hope you didn’t find this creepy, but your daughter’s arm is like the baby leg you just have to put in your mouth. Ok. That sounds officially weird. But please tell me you know what I mean? It’s because it’s so adorable and precious!
Hahaha! Yes, I know exactly what you mean 🙂 Not weird at all 🙂
