Double Pumpkin Spiced Ice Cream Pie
Thanksgiving is just around the corner and I love having friends and family over and cooking a good meal. I also love the idea of making what I can ahead of time. When thinking of a dessert to make, my thoughts went to two things I always have on hand— Breyers ice cream in the freezer and Coffee-mate in the refrigerator. Vanilla ice cream paired with holiday flavors such as pumpkin, turns it into a go-to entertaining-worthy dessert. My favorite pumpkin spice Coffee-mate can be added to this ice cream pie for a special twist, or it can also spice up flavor in whipped cream. This Double Pumpkin Spiced Ice Cream Pie is the perfect make ahead dessert! The convenience of frozen and refrigerated ingredients make it easy to put together this simple yet delicious dessert. It can be made days ahead and stores easily in the freezer. All you have to do is take the pie out of the freezer twenty minutes before serving and your dessert is ready. Double Pumpkin Spiced Ice Cream Pie
Ingredients
- 1 ready-made graham cracker crust
- 3 1/2 cups Breyers Natural Vanilla Ice Cream
- 1/4 cup Pumpkin Spice Coffee-Mate liquid creamer
- 1 cup canned pumpkin
- 1 1/2 teaspoon pumpkin pie spice
- Whipped cream topping, optional
Directions
Using an electric mixer, mix ice cream until slightly softened. Add creamer, pumpkin, and pumpkin pie spice to ice cream and mix until ingredients are mixed through. Gently pour ice cream mixture into prepared graham cracker crust. Freeze for at least four hours or overnight. Take the pie out of the freezer twenty minutes and top with whipped cream.
