I Made & Ate This Yesterday…
No news on the home front. House is still on the market and waiting for that perfect buyer. We’ve had lots of looks and lots of folks love our home, but no one ready to bite the bullet just yet.
In the meantime, while we’re waiting for that perfect buyer, I made myself some High-Fiber Marshmallow Treats π
I featured Β these on my blog close to a year ago and love love love them!!
I was having a major sweet craving and needed to satisfy it while healthily feeding the bell pepper sized baby growing inside of me π
These fit the bill perfectly!
The ingredients are simple…
- 4 tablespoons butter
- 10.5 oz bag mini marshmallows
- 5 cups Fiber One cereal
- 1/2 cup chopped almonds
- 1/2 cup dried cherries (or any dried fruit you like)
- 2/3 cup semi-sweet chocolate chips
In a large saucepan, melt the butter then add in marshmallows. Stir over medium low heat until marshmallows are melted. Once the marshmallows are nice and melty, remove from the heat and add in your cereal, almonds, & dried cherries. Fold through until everything is mixed in. Next add in your chocolate chips. Gently fold these into the mix. Make sure to leave some chocolate chunks in tact.
Spray a 13×9 inch pan with nonstick cooking spray. Spread mixture into the pan and let cool completely. Cut into desired sized bars & Enjoy π
My best advice to you…
Try not to eat the whole pan… they are that good π

These look delish! I just wanted to let you know that Fiber One cereal has aspartame in it. I’ve heard you shouldn’t consume it while being pregnant. I found a similar bran cereal in my grocer’s organic section with similar stats. I’m not trying to be one of those people who tell pregnant people what to do:) just wanted to share the info incase you didn’t know!

I have to ration myself with Fiber One. I love it that much. I don’t buy it anymore though since it has aspartame in it. I don’t like eating those types of artificial sweeteners. This looks amazing though!
I’ve been wanting to try something like this with Fiber One for a while! Now that you say it is good, I definitely will!

I’ve made these and loved these! SO good! It is hard to not eat the whole pan!! I am going to make “haystacks” with Fiber One tonight…I’m excited!
Hmmm, somehow I ended up with 2 boxes of Multigrain cherrios, although I don’t eat them (Taster does) so I was kind of thinking about doing something like this with them…Thanks! π
I have done it with Cheerios (plain) and cranberries before and they were really good!

Great way to add fiber to your diet and satisfy your sweet tooth at the same time. I would have never thought to use fiber one with anything sweet, but this looks yummy!
