easy cucumber & cherry tomato salad
Easy seems to be a very common theme for me these days.
At 35 weeks pregnant I am moving slower and slower each day… aaand to make life even more complicated, we decided to put M through potty training bootcamp over the weekend.
All hands were on deck for this project.
Our little M was such a trooper!
The potty prize box was a big hit. It’s amazing how excited a little girl can get over a 99 cent tiara and some Lifesaver gummies 🙂
We’re not a complete diaper-free household yet, but we are very close 🙂
Since neither Mr. Weekly Bite or I had the time or motivation to cook anything, I put together this very easy summer salad just before the weekend started.
All you need is cucumber, cherry tomatoes, red onion, vinegar, dill, and a little olive oil.
Simple, light, & delicious 🙂
Cucumber & Cherry Tomato Salad
Ingredients:
- 1 large cucumber, thinly sliced
- 1 cup of cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 tablespoon dill
- 3 tablespoons white vinegar
- 1 tablespoon olive oil
- salt & pepper to taste
Directions:
Mix all ingredients in a bowl, add salt & pepper to taste, chill for at least 1 hour.
Enjoy 🙂
A potty prize box is such a good idea! I don’t know who potty training is harder for, the kids or the parents! Haha.
Haha! I agree! Potty training is just exhausting for the whole family 🙂 But totally worth it 🙂
I make a very similar salad! Love your addition of dill!
Looks so fresh!!!
Quick salads like this are perfect for summer! Good luck with the PTing. I think that was probably my least favorite part of parenting so far.
I love simple salads like this. Have you tried the ‘strawberry tomatoes’ at Trader Joe’s..? I think they’re the sweetest tom’s I’ve ever had (that I didn’t personally pick off a vine).
PS I love when a recipes directions are: 1) mix 2) eat 😉
Mary – haven’t tried those strawberries yet. I’ll pick some up during my next Trader Joe’s trip. They sound yummy 🙂
I’m eating something very similar right now for lunch! 🙂
i eat this all the time and love it! And if I need more protein for the day, I throw in a cut-up piece of low-fat cheese.
good luck with the potty learning!!!
Looks like the perfect easy summer meal. Good luck potty training!!! 🙂
I have been using cucumbers from the garden to make a similar salad. Except I use a little Italian dressing and add some feta cheese. Delicious!
Amen to easy and delicious! This looks perfect since we have tons of cherry tomatoes and cucumbers here! Good luck with the potty training! I know M will do well!
I LOVE dill! I often buy dill & have those last branches left that would be just enough for this salad. Thanks! Will definitely be trying this one out. Lisa x
Tim and I fell in love with cucumber-tomato salad during a trip to Israel a few years ago. I love the addition of the dill- sounds like a scrumptious, healthy, and easy combo.
