Fig Muffins

I have a situation… a closet situation.
I consider myself a pretty organized person. A true Type A…. kinda…. except for one thing….. my closet. I can’t keep my closet organized to save my life. There’s been times where I’ve taken everything out, organized it to a tee, then within 3 months, its a complete mess.
What’s so difficult with putting something up where it belongs? I have shoe racks… very pretty shoe racks. I have nice hangers, pretty hooks for all my belts and scarves, and nice deep shelves for my sweaters. So what gives? What’s up with me?
Saturday morning my husband looked at me, opened the door to my closet and said “FIX THIS.” “THIS WEEKEND.”
So, to further procrastinate cleaning my closet, I went to the grocery store and came home with dinner ingredients and figs. Beautiful big dried turkish figs.
I decided to make some muffins. Vegan Fig Muffins.
Ok. Before you think I’ve gone all vegan on you, I have to say something. These are dense, moist, and rich. You wouldn’t even know they were vegan unless I told you. If you like figs, you’ll love these.
First, you want to combine the whole wheat pastry flour, baking soda, and salt in a bowl.
In a separate bowl, combine, sugar, canola oil, fig preserves, and vanilla. Mix until fig preserves are blended through.
Combine dry ingredients with wet ingredients, then gently fold in chopped dried figs.
I like to spray my muffin cup liners with non-stick cooking spray. I also use my handy dandy ice cream scooper to get nice size muffins.
You want to bake them until nice and golden brown, or until a toothpick comes out clean when inserted in the center.
Ingredients:
- 2 1/4 cups whole wheat pastry flour
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons baking soda
- 1/2 cup sugar
- 1/2 cup fig preserves
- 1 cup canola oil
- 1 cup unsweetened applesauce
- 1 Tablespoon vanilla extract
- 1 cup roughly chopped figs
Preheat oven to 325 degrees
Combine flour, salt, and baking soda in a bowl, set aside. In a mixer, combine sugar, canola oil, applesauce, fig preserves, and vanilla. Mix until blended well. Add flour mixture with sugar mixture. Mix until combined. Gently fold in chopped figs.
Line muffin tin with cup. I like to spray the muffin cups with non-stick cooking spray. Use a regular size ice cream scoop to scoop out the batter into the muffin cups.
Bake for 27 minutes rotating once until golden brown or toothpick comes out clean.

I have a major closet sitation. Actually – 2 of them. I used 2 full closets.
lol– I’m taking up 90% of the closet space in our house, and my hub hates me for it 🙂

I love figs. I’m so making these muffins asap. I am exactly like you when it comes to the closet. I’m kind of a neat freak, type A cleaner/organizer. But, the closet? OMG. It’s a mess. It kind of bothers me every time I see it, but it never stays clean. It’s my ‘oh well’ area. However, whenever I’m in there I grab something I don’t wear anymore and add it to the Goodwill bag. Little by little it should get cleaned. Either that or I’ll be clothesless by spring.
I have to say my closet is organized in a type-A way; however, my desk at my parent’s house is HORRIBLE! I don’t even like to open it and when I do clean it, I usually just dump everything because it’s all old papers and magazines on top of things that should be there like notecards and thank-you notes and software manuals.

I’m totally the same way, i can’t keep the closet organized no matter what! same thing with my pantry…must be something to do with being able to shut the door. out of sight out of mind 🙂

OH MY GOSH! I love figs and I love muffins…you are a genius!! haha! I have no idea on the closet thing because I am the same way!! haha! I am so organized in life and everything has a place except the closet! My husband just shakes his head! It is BAD!!!

Re: the closet. Mine is my office, which is horrible considering I consult out of my office and work with blood! I need to work on it….badly! What your hubby said though, mine would say something along those lines entirely!

I def have a closet problem – I tend to be organized everywhere else but just throw stuff into the closet. It drives me nuts but it’s such a project to organize it!

These look so good! I love figs, always tempted to buy them, but never know what to do with them when I get them home. These look like a good option, though I would probably de-vegan-ize them by adding a big smear of butter!
On the closet front, I find that most closet organization issues stem from too little room. Sadly, moving into a house with bigger closets is not usually an option…

Fig muffins look to die for!
I have a couple situations; closet, make-up drawers in bathroom and linen closet. Now, in the kitchen and pantry I’m OCD on neatness and order. Go figure…

My entire apartment is a situation. Although the situation could be remedied if my apt. wasn’t so teeny. Now, all I can think about is “The Situation” from the Jersey Shore.

So ironic. I am the same way, as in Type A, except for my closet! Nick makes fun of me all the time, but when you open my closet shoes fall all over the place, which is why only I should open it…. I am SUPER organized in every other aspect of my life. We just don’t have enough closet space, that’s my excuse!

the Vegan Fig Muffins look to die for! And I would GF them by using almond/oat/coconut flour combo. FIGs rock as does all dried fruit in muffins…little surprises in each bite 🙂
Mmmm I love figs. Sigh…I procrastinate cleaning my closet by reading cookbooks and cooking magazines. 🙂 Truly, I am going on two months of what looks like a monster living in my closet.
