Vegan Nut Butter Cookies
In honor of my very cool vegan friend Natalie, who wrote a fabulous guest post for me yesterday… I decided to post this recipe.
Before I get started on this recipe, I just want to thank everyone for being patient with me this week. I’m feeling so much better!
Ok… now for the cookies!
I’ve seen this recipe floating around the blogosphere for a while now. I think it may have originated from this website… not sure though.
What attracted me to these cookies was how incredibly easy they are to make.
In the original recipe, you can use just about any nut butter you like, plus there’s lots of add ins like dried fruit, nuts, coconut, etc…
When it comes to cookie combos, I like things simple.
I’ve tried all the nut butters and as much as I’d like love Barney Butter, or other nut butters… I’m a PB gal through and through… to me, nothing tastes better.
As far as cookie combos, PB & Chocolate is my favorite… plus its simple.
This recipe is so easy I know it by heart.
I also use my little melon scooper to keep these cookies bite size 🙂
Ingredients:
- 1 cup old fashioned oats
- 1/2 cup maple syrup
- 1/2 cup peanut butter (or any nut butter you like)
- 1 tablespoon vanilla
- 1/2 cup semi-sweet chocolate chips or carob chips
Directions:
Preheat oven to 325 degrees
Combine oats, syrup, peanut butter, and vanilla.
Stir until combined.
Fold in chocolate chips.
Use a melon ball scooper or a small spoon and drop onto cookie sheet.
Bake for 11 minutes or until lightly golden brown.
Cool on baking sheet.
ENJOY!!!!

My favorite nut butter would have to be sunflower butter (which is actually a seed, so I guess it doesn’t count lol). In that case, it’s almond
I’m bookmarking thses cookies. PB cookies are the hubby’s fave and oatmeal are mine. What a perfect compromise! 🙂
I bet the maple syrup is the key ingredient. I LOVE vegan baked goods, especially ones without gobs of oil, as you know 😉 They look delicious! They’re on the list to make!
I’ve heard rave reviews from others on the High Fiber Marshmallow Treats! They were my last taste test at work and lots of people went home to make them!

These look great. I like that they’re bite-sized too. I’m a pb girl, too. I love almond butter, but there’s nothing like peanut butter and chocolate.
I made something similar a while back and they turned out SO good! I might give these another try tomorrow. I love that they are gluten-free and egg-free!

mmmmm…my favorite is definitely peanut butter. almond butter’s OK with carrots, but peanut (creamy!) is definitely the best 🙂
Love how simple these are! I am actually in need of another vegan treat because I’m almost out of my blondie bars!! (A bite size makes a perfect lunch treat!)

I am like you, I prefer peanut butter always. Specifically I LOVE Smart Balance crunchy peanut butter, with omega-3. It’s addicting. I also LOVE Barney Butter, because it TASTES like PB! I’s got all the health benefits of almonds, but with the PB taste I love. Can’t beat it. But the price….well…that CAN be beat.
As soon as I come back from vacation I will be making these. I am loving nut butters lately and have been using them every chance I get. these look so good!
They look amazing, and SO easy to make. My favorite is almond butter! But if I had the $$, I’ll bet I’ll love pistachio butter the most.
My best friend at work is Vegan, I’m totally going to make this for her.
