Greek Roasted Potatoes

There’s something you should know.  I have a slight obsession with feta cheese.  I put it on just about anything.  I even like to eat it plain, straight out of the container.  This was my first time making these potatoes and they did not disappoint.

Before I get to the recipe, I wanted to give you a little peak at what goes on in my house when I’m cooking.

The days of M quietly playing while I cook are gone, finito, kaput.  Chaos is the best word to describe the scene.  She grabs up on the counter tops…

Runs around the house, sings, cries, screams, and begs for whatever food I’m chopping.

If I’m chopping onions, she begs for it, so I give it her.  She spits it out.

If I’m chopping garlic, she begs for it, so I give it to her.  She spits it out.

If I’m slicing lemons, she begs for it, so I give it her.  She spits it out.

At least I’m exposing her to different flavors, right?! 😉

I think its time I start giving M some small cooking assignments, that way she feels she’s contributing and helping, instead of transforming into ‘M the Destructor’ 😉

This recipe was inspired by the cookbook Kitchen Playdates.  I received it as a gift and have been slowly working my way through all the recipes.  Here’s how to make roasted greek potatoes.

* Cut about 8-10 small to medium size red potatoes into wedges.  Throw potatoes into a large bowl.

*Finely chop 1/4 cup red onions.  Add them to potatoes.

*Finely chop 2 cloves of garlic and juice two lemons.  Throw garlic and lemon juice into the potato bowl.

*Next you want to sprinkle 2 teaspoons of oregano over potato mixture and drizzle in about 1/3 cup olive oil.  Mix well.

*Pour potato mixture onto a large sheet pan.  Bake at 425 degrees for about 20 minutes, stirring every 5 minutes to make sure potatoes are coated.

*Pull the potatoes out of the oven, sprinkle with 1/2 cup feta cheese, and pop it back in the oven for about 6 minutes, or until feta starts to slightly brown.

Ingredients:

  • 8-10 small to medium size red potatoes (cut into wedges)
  • 1/4 cup finely chopped red onion
  • 2 gloves of garlic, finely chopped
  • juice of two lemons
  • 2 tsp dried oregano
  • 1/3 cup olive oil
  • 1/2 cup crumbled feta cheese
  • salt & pepper to taste

Preheat oven to 425 degrees

In a large bowl, combine potatoes, onion, garlic, lemon juice, oregano, & olive oil.  Mix well and pour onto a large sheet pan. Bake for 20 minutes, stirring every 5 minutes to make sure potatoes stay coated.  Pull pan out of oven, sprinkle feta cheese over potatoes, bake for an additional 6 minutes or until feta starts to brown.  Serve warm.

The flavors were amazing!  We ate this along side some garlic & herb marinated chicken.  It was the perfect meal 🙂

    Before I even read your post I saw that photo and thought, Feta? Yes. I love feta. And then on top of that this has lemon too? I’m so making this. Sorry if I murder the recipe by cutting onions and garlic, but I think it’ll still be good. Yum!

    I am the same with feta (actually, with most kinds of cheese) 😉 This recipe sounds delicious! I bet I can make a meal out of it if I serve it with some sauteed spinach and maybe an egg!

    The potatoes look awesome! I can’t wait to try this – feta on potatoes – why didn’t I think of that before? As to letting M work in the kitchen, I started giving my daughter duties such as pouring pre-measure ingredients into a mixing bowl and simple stirring jobs. She loves doing it and often requests to be involved. She’s now almost 4 years old and she helps me regularly in the kitchen. Last night she helped prepare a sauce on the stove, with my direct supervision, of course. She did a great job. Bonus is that she’s more likely to try something she helped prepare. Coming from a VERY picky little girl, anything that improves options is a great benefit.

    I love feta too. These would be great with za’tar, which is a Middle Eastern spice but I think it goes well with feta!
