Turkey Bolognese

Hi there.  If you hadn’t heard… my oven broke.

Correct that.

I broke the oven 🙁

So, being without an oven sucks!  Especially for me since I’m more of a baker than a stove top cook.  Even when I cook meals I use the oven.

So, I’m gonna say it again… not having a working oven sucks!

The positive side?

The stove still works.

After perusing several recipes, I adapted this one from Good Housekeeping Magazine.  I’m not much of a pasta person, but this one looks appealing, plus, I had all the ingredients 🙂

Recipe:

  • 12oz linguine (I used whole wheat)
  • 4 tbsp olive oil
  • 1 lb lean ground turkey
  • kosher salt to taste
  • pepper to taste
  • 2 med. carrots, chopped
  • 2 celery sticks, chopped
  • 1 large onion, chopped
  • 1 clove garlic (pressed or minced)
  • 28oz can crushed tomatoes
  • 1/2 cup skim milk
  • 3/4 cup grated parmesan cheese
  • 1/4 cup fresh chopped parsley

Cook pasta according to boxed directions.

While pasta is cooking, heat olive oil and cook carrots, c

elery, onion, and garlic until tender.  Add ground turkey.  Cook until turkey is browned.  Stir in tomatoes, milk, salt, & pepper.  Heat to a boil, then reduce to a low simmer.

Once pasta is cooked, drain pasta and reserve 1/4 cup pasta water.  Return pasta to large pot.  Stir in sauce from skillet.  Add parmesan cheese, parsley, and reserved pasta water.  Toss to coat pasta.  ENJOY!!!

This dish was super easy to make considering I had no stove.  I’m not a huge pasta person, but since its so easy to make on stove top, I’ve been expanding my pasta dishes.

    That looks really good. I have no idea what I would do if my oven broke. I think I would find my 3 year old in front of it crying because I couldn’t make him muffins though.

    way to make the most of your ovenless situation…looks delish! i just made a yummy chicken dish using the stove–just cooked chicken in 2 tbsp olive oil for about 5-6 minutes each side, then add 3 tbsp balsamic vinegar and 1 tbsp honey and let cook for another minute or so (serves 4) super easy, quick and everyone seemed to like it! hope you’re oven gets fixed soon!
