easy peasy spaghetti pie

The Weekly Bite household officially has a meal everyone loves! Me, Mr. Weekly Bite, M, and even Shiner all love it! Like I mentioned yesterday, M gobbles this up and before I know it she’s asking for more.

This recipe is as easy as pie (pun intended). Ready to get started? Here we go…..

First you wanna boil the pasta. Only boil it for about 9 minutes. I use half a package. This makes just the right amount.

While the pasta’s boiling, mix the cheeses and spices. You wanna mix 1 cup part-skim ricotta, 1/2 cup parmesan cheese, and 2 tablespoons Italian seasoning.

Once the pasta’s ready, drain it and toss a tablespoon of olive oil in it. Set it aside to cool.

While the pasta’s cooking, brown one pound of meat along with 1/2 cup chopped onion. Once the meat is browned, add in one 16oz jar of your favorite marinara sauce. Cook for about five minutes then turn off the heat. Add salt & pepper to taste.

Next you wanna whisk two eggs with 1/2 cup parmesan cheese. Toss egg mixture into pasta.

Spray a deep pie dish with non-stick cooking spray. Pour the pasta into the pie dish and use your hand to form it into a ‘pie crust.’

Next, spread the ricotta cheese mixture over the pasta.

Then top with the meat sauce….

Finally top with 3/4 cup part-skim mozzarella… Looks like pizza doesn’t it?

Bake at 350 degrees for 30 minutes.

See… I told you! Easy Peasy 🙂

Ingredients:

  • 1/2 package spaghetti (I like Barilla Plus)
  • 2-3 tablespoons olive oil
  • 1 lb lean ground turkey
  • 1/2 cup chopped onion
  • 1 tablespoon garlic powder
  • 2 eggs
  • 1 cup parmesan cheese
  • 1 cup ricotta cheese
  • 1 tablespoon Italian seasoning
  • 16 oz jar of your favorite marinara sauce
  • 3/4 cup mozzarella cheese

Directions:

Preheat oven to 350 degrees

Spray deep pie dish with non-stick cooking spray. Boil spaghetti for no more than 10 minutes. Drain coat with 1 tablespoon olive oil, set aside.

While the spaghetti’s cooling, mix the ricotta, 1/2 cup parmesan cheese, and Italian seasoning. Set aside. In a large saucepan, heat one tablespoon olive oil to medium heat, saute chopped onions for a few minutes until tender. Add ground turkey and garlic powder. Cook until turkey is browned. Add jar of marinara sauce to meat. Add salt & pepper to taste. Set aside.

Whisk 2 eggs with 1/2 cup parmesan cheese. Toss egg mixture into pasta. Pour pasta into pie dish and form a pie crust shape with the pasta. Spread ricotta cheese mixture over pasta. Pour meat sauce over cheese mixture. Top with mozzarella.

Bake for 30 minutes. Once cooked, remove from oven and let set for about 15 minutes.

When you eat this you’ll most likely make the same noise M does after every bite……………

    Oh my. I’ve seen Giada make something like this before. Yours looks amazing! Love the ricotta hidden underneath the sauce and mozzarella.

    That’s a great idea! I bet you can mix in spinach with the ricotta mixture.

    I haven’t made this is a long time. Actually, Bill recently asked me why I don’t make that spaghetti pie anymore. Now that you reminded me I will have to make it soon!

    This looks like something my husband would love. And most normal 2-year-olds. My 2-year-old is not normal, however, and would most likely not want to try this unless I scraped off the sauce. She hates tomato sauce. Strange kid.
