Chickpea & Couscous Salad

Hi There! I’ve got another great salad recipe for you today. This one is simple & tasty :)

A couple of days ago I talked about my favorite lunch. That included a turkey sandwich and some sort of salad. The first salad I featured was my Easy Broccoli Pasta Salad. Now its time for the second feature salad. Chickpea & Couscous Salad. This fiber rich salad comes together in about 10 fast minutes.

Here’s how to make it:

Step 1:

Make sure to drain and rinse the chickpeas first.

Step 2:

Chopped chives also works great as a replacement for the onions.

Step 4:

Step 6: Mix everything together and serve!

Ingredients:

  • 1 14oz can chickpeas (drained & rinsed)
  • 1 cup cooked couscous
  • 1 green onion (thinly sliced)
  • 1.5 tablespoons red wine vinegar
  • 1.5 tablespoons olive oil
  • salt & pepper to taste

Combine all ingredients together in a bowl & serve. Salad can be served chilled or at room temperature.

That’s it!

Nice and easy!

The other way I like to eat to this is plopped on top a pile of greens. Its delicious :)

P.S. Rumor has it temps are suppose to be in the upper 70′s today! If you’re in the DC area (or the east coast) spend as much time outside as possible. That’s my plan :)

Easy Broccoli Pasta Salad

Before I get to this delicious pasta salad, I have to show you what M came home with from school yesterday. Her class made Valentine gifts for us. The first is her tiny handprint on a white tile. I think it’s suppose to be a coaster? Not sure. Maybe a hot plate? Either way its adorable.

It’s her two little hands tied at the ends of a string that’s the entire length of her wing span. So it’s like a little hug. So cute! This made me smile the rest of the day :)

After I opened M’s gift I made a couple of salads. My favorite (and regular) lunch at home is a turkey sandwich with some sort of side salad.  Each week I like to make one or two side salad’s to have on hand. This week I’ll be showing you my two favorites.  Today it’s Easy Broccoli Pasta Salad. I love this salad because its so simple yet so flavorful. Bonus is M loves it too :)

Here’s how to make this simple salad….

Step 1:

I like to use Barilla Plus Rotini for this salad.

If you’re not a huge fan of onions you can use one instead of two.

Step 4:

The pine nuts can be toasted before hand for added flavor. If you don’t have time to toast them, the salad still tastes great with them plain.

Step 5:

Stir in olive oil until mixed though.

Step 6:

Add salt & pepper to taste. I start out with 1/2 tsp salt and 1/2 tsp pepper, then add more to taste if needed.

Store the salad in an airtight container and chill for at least 2 hours before serving. The longer this chills, the better it tastes.

This salad will last up to a week.

This can also be made into a meal by adding some chicken or salmon to the mix :)

Old Bay Roasted Potatoes

I can always tell when my husband is hungry.

There are certain things he does.

He hangs around the kitchen, talks a lot, and starts stirring or flipping whatever food I’m cooking.

I pretend to tolerate it… but it secretly gets on my nerves…

Our kitchen is pretty small… so with two people in it… its crowded.

He’s constantly behind me sampling and tasting all the food…

And then he does it…

He goes to the spice cabinet and grabs the same seasoning every time.

What is it about Old Bay that men love so much?

I mean, its a good seasoning and all… but does it HAVE to be added to EVERY meal I cook?!?!!

He puts Old Bay in his eggs, his tuna, his steaks, his chicken, his fish, his soup.

He even sprinkles a little in his turkey sandwiches.

I’m surprised he doesn’t put it in his cereal… because that would be gross.

So I make these roasted potatoes for him.

To him… it would be a sin NOT to add Old Bay to such a basic side dish.

I have to admit… Old Bay does make these potatoes pretty tasty!

Ingredients:

  • 3 large Yukon Gold Potatoes cut into 1 inch chunks
  • 2-3 tablespoons olive oil
  • 2 tablespoons Old Bay Seasoning
  • 2 teaspoons Garlic Powder

Directions:

Preheat oven to 450 degrees.

In a large bowl, combine potatoes with olive oil.

Add Old Bay and garlic powder and mix until potatoes are coated.

Spread potatoes on a large cookie sheet.

Baked in oven for 20 minutes, then flip potatoes and bake for an additional 10-15 minutes or until potatoes are golden brown.
